This semester only two students have signed up for the "How to Wink" remedial class. I have to say that they are still not entirely clear on the concept.There were a few other applicants but it turned out that they'd misread the name of the class.
The bottle is then riddled, so that the lees settles in the neck of the wine bottle... Manual riddling is still done for Prestige Cuvées in Champagne... mechanised riddling equipment (a gyropalette) is used instead. (Wikipedia)
