Manual riddling is still done for Prestige Cuvées in Champagne... mechanised riddling equipment (a gyropalette) is used instead.

It reminds me of a really cute ancient pottery bowl I saw once--- it had a little lady bug painted on the bottom of the inside of the bowl. Guess the natives sometimes need to encourage their children to eat at meal times too.
