The bottle is then riddled, so that the lees settles in the neck of the wine bottle... Manual riddling is still done for Prestige Cuvées in Champagne... mechanised riddling equipment (a gyropalette) is used instead. (Wikipedia)

That is very charming.
Until I came along, the wee dude was glowering up the road in the direction of another cat on the other side (who was, in turn, glowering back). That's probably why he was sitting so still, oblivious to the incipient shower.
