Manual riddling is still done for Prestige Cuvées in Champagne... mechanised riddling equipment (a gyropalette) is used instead.
That is some sage advice there, which I follow all the time even without signs to remind me... but it could be argued that if you are bewaring of something then it can't be sudden. Or if it is sudden then you weren't bewaring it enough.
For instance, if Johnny had bewared the feeling of being surrounded by horses, it would not have come as such a surprise.
