Manual riddling is still done for Prestige Cuvées in Champagne... mechanised riddling equipment (a gyropalette) is used instead.
That is reassuring. I've never seen so much of the stuff as in the last couple of weeks, all from Russia, and it was starting to make me paranoid. Glad I'm not alone.
